What Is Sous Vide?
"Sous Vide" is French for "under vacuum". It is also sometimes referred to as low-temperature long time (LTLT) cooking. The process as we know it today was pioneered sometime in France in the 60s and 70s.
You sous vide food by placing it in a plastic pouch that is submerged in a water bath. The water bath is then heated to a very specific temperature by using a sous vide machine. The sous vide machine circulates the water and keeps it at the exact temperature you set it to.

Does It Work As Well As A Sous Vide Stick?
Yes. The Sous Vide function on the Instant Pot works just as well. Just remember this is a long process to get the perfect results. So while it may seem like your Instant Pot is taking forever to finish cooking, just know it takes just as long with a Sous Vide Stick.
Should I Buy A Sous Vide Stick Or Just An Instant Pot?
This question all depends on the model of Instant Pot you buy. There are only a select few Instant Pots that offer the Sous Vide function.
If you already own an Instant Pot, I would not splurge to buy another full Instant Pot only for the Sous Vide function. If you don't already have an Instant Pot or electric pressure cooker, it is worth the investment to buy one with the sous vide function.
